Celebrate Cionco de Mayo with this fun twist on spaghetti! Fiesta spaghetti has all the makings of a burrito but in spaghetti form and without the meat!

Love Mexican inspired dishes?  We have lots of them here at Southern Mom Cooks!  Seriously, it doesn’t ave to be Cinco de Mayo to enjoy these dishes that are full of flavor.

Fiesta Vegetarian Spaghetti Recipe

Fiesta Vegetarian Spaghetti Recipe

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Fiesta spaghetti has all the makings of a burrito but in spaghetti form!

Ingredients

  • 8 oz uncooked spaghetti
  • 2 tbsp vegetable oil
  • 1 small onion diced
  • 2 cans 8 oz each tomato sauce
  • 1 can 10 oz each diced tomatoes & green chilies - mild, original or hot - your choice
  • 1 can 15 oz each black beans, rinsed and drained
  • 1/2 teaspoon ground cumin

Instructions

    Cook spaghetti according to package directions, drain and set aside.


    In a large skillet over medium heat, warm the oil. Saute the onions until tender, about 5 minutes.


    Add the diced tomoatoes, black beans, cumin and tomato sauce. Simmer 10 minutes, stirring occasionally.


    Serve spaghetti topped with sauce or mix spaghetti into sauce and serve.

    What a delicious and festive looking dish! Spaghetti is quite tasty on its own but this bold combination of spices and flavors create a fantastic dinner that is hard to pass up. Try adding some cheddar cheese for additional, flavorful fun.
