How do I know if my spaghetti is overcooked?
Determining whether spaghetti is overcooked can be crucial to perfecting your pasta dish. Ideally, spaghetti should be al dente—firm to the bite—not mushy or overly soft.
To test, take a piece of spaghetti out of the pot about a minute before the suggested cooking time on the package. Allow it to cool slightly, then bite into it. The center should have a slight resistance.
Visually, overcooked spaghetti becomes significantly larger in diameter and loses its glossy sheen, taking on a bloated and sticky appearance. It also tends to clump together rather than flow freely. Perfectly cooked spaghetti maintains its shape, has a slight chew, and doesn’t stick excessively when served.
Remember, pasta will continue to soften once removed from the heat, especially if it remains in the hot water.

Fiesta Vegetarian Spaghetti Recipe
Fiesta spaghetti has all the makings of a burrito but in spaghetti form!
Ingredients
- 8 oz uncooked spaghetti
- 2 tbsp vegetable oil
- 1 small onion diced
- 2 cans 8 oz each tomato sauce
- 1 can 10 oz each diced tomatoes & green chilies - mild, original or hot - your choice
- 1 can 15 oz each black beans, rinsed and drained
- 1/2 teaspoon ground cumin
Instructions
- Cook spaghetti according to package directions, drain and set aside.
- In a large skillet over medium heat, warm the oil. Saute the onions until tender, about 5 minutes.
- Add the diced tomoatoes, black beans, cumin and tomato sauce. Simmer 10 minutes, stirring occasionally.
- Serve spaghetti topped with sauce or mix spaghetti into sauce and serve.
