Easy Italian Hamburger Soup Recipe

This Italian Hamburger Soup Recipe is a family favorite and you can seriously have it made in about 30 minutes for fall meal.

Plus, if you want to dress it up and make it a little bit more of your own, you can add all sorts of fun things and turn this hearty soup into a whole new evening stew. It’s just a great all-around fall recipe that you have to try.

But back to this amazing Italian soup. I seriously can’t get enough. There’s just the right amount of everything to make this the perfect accompaniment for crusty bread or even breadsticks.

And if you’re like “but really, I want to toss some other yumminess in” I’ve got some ideas for you. Toss in some ground turkey instead of ground beef. Or add a little Italian sausage.

Add a can of tomato sauce and some chopped pepperonis for a “pizza soup“.

How to Make Italian Hamburger Soup

In a large stock pot over medium high heat, brown your ground beef and onions until the onions are translucent and the meat is no longer pink on the inside. If you have trouble with the meat or onions sticking, you can add a little olive oil to the pan.

Reduce the heat then add the garlic and Italian seasoning, salt, and pepper. 

Stir in the mixed vegetables (carrots, celery, green beans, etch), diced tomatoes and beef broth.

Cover the soup and simmer for 20 minutes.

Finally, add the kidney beans and macaroni noodles. 

Simmer for an additional 10 to 15 minutes, until the noodles are tender.

Remove from the stove and enjoy!

If you want to make this in the slow cooker instead, just pop the ingredients into the crockpot after the meat is cooked and set it to high for 2 hours. It’ll make a great all-day snack soup.

If you have a cold day and an empty belly, this Italian Hamburger Soup Recipe is perfect for making you toasty and hearty enough to make you so wonderfully full.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 can diced tomatoes with juice
  • 1 package frozen mixed vegetable blend (corn, peas, green beans, and carrots)
  • 6 cups beef broth
  • 1 can kidney beans
  • 2 cups macaroni noodles

Instructions
