I’ve been eating hot cross buns since I was a little girl. What used to take hours in the baking tray or baking pan in the oven takes just a short amount of time now. Make certain that you give the dry yeast time to really mix well and cause the dough to rise. You want it doubled in size, really. Adding it to a large bowl, covered with plastic wrap is a fast and easy way to make the dough rise. You’ll want to do this for an hour or until doubled. Then you just need a lightly floured surface to work with to roll each piece and cut into equal pieces.

Once the bread is done baking, let cool on a wire rack before using a piping bag and icing to make the cross on top.

My boys get super excited about this tasty recipe because they love the sweetness of the added dried cranberries paired up with the fun golden brown on top. They’ll eat them warm, cold, leftover, or any other way that they can!

Do you have to use bread flour for your bread machine?

You don’t, although you can. This recipe doesn’t call for bread flour so I like to use all-purpose flour instead. Bread flour makes for a great recipe as well so it’s totally up to you.

Ingredients

  • ¾ cup pf water
  • 3 T butter, unsalted
  • 1 T instant powdered milk
  • ¼ cup of sugar
  • 2 eggs at room temp
  • 1 tspcinnamon
  • 3 cups of flour
  • 1 T active dry yeast
  • ¾ cups of dried fruit
  • 2 T of water
  • ½ cup of powdered sugar
  • ½ tsp of vanilla
  • 2 tsps of milk

Instructions

Preheat your oven to 375 degrees. Spray your casserole pan (9X13) with nonstick spray.

Put the ingredients in your bread machine in this exact order: water, butter, powdered milk, sugar, 1 whole egg, 1 egg white (yolk reserved,) cinnamon, flour, and yeast.

Press the dough cycle button. Add the fruit when it beeps or tells you to in the cycle. If it doesn't beep, add when the cycle is complete and done.

Take out the dough and put it on a surface with a little bit of flour. Pat it flat

Spinkle on some raisins and continue to knead.

Cover and let it rest for about 10 minutes or so.

Once done, take the dough and split it into 12 pieces, equal in size. Put them in the casserole dish.

Grab a whisk and whisk the egg yolk and water to make the egg wash for the top. Brush on the rolls.

Put in the oven to bake for 20-25 minutes. Take out and let it cool on a wire rack.

Mix the vanilla, milk, and powdered sugar until smooth.

Put in a piping bag and snip the corner. Squeeze onto the tops to create the crosses.
