4th of July Chocolate Chip Cheesecake Bars

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

Cookie Base:

  • 2 Sticks of Butter (1 cup) – softened
  • 2 Eggs
  • 1 Teaspoon Vanilla
  • 2 1/2 Cups Unbleached Flour
  • 3/4 Cup Sugar
  • 3/4 Cup Brown Sugar
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Salt
  • 1 12oz Package of Chocolate Chips
  • 1/2 Cup Peanut Butter Chips
  • 1 Cup Holiday M&Ms

Cream Cheese Mixture:

  • 8 oz cream cheese (softened)
  • 1/2 cup sugar
  • 1 egg (room temperature)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat Oven to 350 Degrees. 
  2. Mix all the "wet" ingredients for the cookie dough (butter, eggs, vanilla).
  3. Add in all dry ingredients - (flour, sugar, brown sugar, baking soda, salt.
  4. Fold in Chocolate Chips.
  5. Line a 9-inch square baking dish with parchment paper. 
  6. Press a little more than half of the cookie dough into the pan lined with parchment paper. Press down firmly to create an even base. 
  7. In a medium size mixing bowl, beat cream cheese well. 
  8. Mix in the sugar and beat until combined. 
  9. Add in the vanilla and egg and beat until smooth. 
  10. Pour the cheesecake mixture over the top of the cookie dough base. 
  11. Crumble the remaining cookie dough over the top. 
  12. Sprinkle on peanut butter chips, Chocolate Chips, and holiday M&Ms.
  13. Bake for 30 to 35 minutes. 
  14. Remove from oven and let cool completely.
