Fast and Simple Stuffed Pepper Soup

Holy moly this Stuffed Pepper Soup is amazing. If you’re looking for a simple soup that tastes like stuffed peppers, this is the one for you. Seriously one of my favorite soup recipes.

In less than 30 minutes of time, you’ll have a great recipe and a truly hearty soup. Easily add in more ground turkey and ground beef or even a bit of brown rice to make it stick to your ribs even more.

A large pot of this soup will feed the entire family with ease. Adding in the beef broth, salt and pepper, and a few other ingredients is all you really have to do!

What I love about this simple soup recipe is that it has a bit of heat. I love to add some hot sauce to it to really make it stand out and have flavor!

Stuffed Pepper Soup

Since this soup recipe has beef and chorizo, I find that the flavor is a perfect mix between mild and spicy. Adding in the white rice is a great way to add texture and make it even more hearty to enjoy as well. This is perfect for cold weather days when you want to snuggle up by the fire.

We eat a ton of soups in our house but this one is always a favorite of the boys. They love the heat that is added and the easy ingredients, too. I never have a problem convincing them to come to the table for this one.

Is pepper soup healthy?

I would say that this is a very healthy soup. If you’re not a big fan of eating rice, that is the one thing that might add to it not being on your list. You can omit the rice though if you want, it’s up to you.

How long does stuffed pepper soup last in the fridge?

As long as you keep it covered and cool, it should last for 3-4 days without issues. After that, you’ll want to get rid of it or put it in the freezer for later.

Stuffed Pepper Soup

Prep Time: 20 minutes
Cook Time: 6 minutes
Total Time: 26 minutes

The flavor of this stuffed pepper soup is amazing!!

Ingredients

  • 2 pounds of ground beef
  • 1 pound of ground sausage/chorizo
  • 1 1/4 cup of white rice or brown rice
  • 4 diced peppers
  • 1 diced onion
  • 2 28 ounce cans of diced tomatoes
  • 64 ounces of beef broth
  • 4 cloves of diced garlic
  • 2 T of Italian seasoning
  • 2 T of Red Hot Sauce
  • 1 t of red pepper flakes

Instructions

Add the meats along with garlic, hot pepper flakes, Italian seasoning, and onions into the Instant Pot. Cook for 10 minutes to make certain meat is done.


Once done put in the beef broth and stir. This will deglaze the pan.

Put in all the peppers, diced tomatoes, hot sauce, and rice.

Add lid and seal. Set the timer for 6 minutes and cook on high pressure.


Allow the Instant Pot to sit for 6 minutes then carefully release pressure.

Serve with fun toppings.

Question Can the stuffed pepper soup be made in a crockpot?

I've never used the slow cooker for this recipe, but I would imagine that it could happen. You would need to make sure that you cook the meat and drain off any excess grease before adding to the crockpot. You could then add the cooked meat and the rest of the ingredients into the crockpot to cook on high for 4 hours. I wouldn't add the rice into the crockpot, but rather make that separately and serve it in the bowl with the soup.
