This Lemon Cake Mix Cookies Recipe uses simple ingredients like a cake mix. They're chewy and so full of citrus flavor!

Ingredients

  • 1 box Lemon Cake Mix
  • 2 Eggs
  • 1/3 cup Vegetable Oil
  • 1/3 cup Confectioner's Sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Add parchment paper to two baking sheets. Set aside.
  3. Beat the cake mix, eggs, and oil until smooth. This will take about 2 minutes.
  4. Add the confectioner's sugar to a small bowl.
  5. Use a 1 1/2 T cookie scoop to scoop out the batter, then roll the balls in the sugar bowl until coated.
  6. Put the cookie dough balls on the cookie sheets, 3 inches apart.
