No one will ever believe that these cookies are gluten-free. They’re the real deal, and everyone will obsess over them.
My boys love when I whip these up because they enjoy that tasty s’mores flavor and taste. They’ll be sure that they grab one for each hand as they walk through the kitchen.

Is it hard to freeze cookies?
Freezing cookies can be a convenient way always to have a batch of your favorite treats. However, the question on many bakers’ minds is whether it’s hard to freeze cookies.
The answer is no, it’s pretty easy!
Simply allow your cookies to cool completely before placing them in an airtight container or freezer bag. Be sure to label and date the container to track when they were frozen.
When you’re ready to indulge, take the cookies out of the freezer and let them thaw at room temperature for a few hours or overnight.
There’s no need to sacrifice the freshness and taste of your cookies with the ease of freezing.

How do I store leftover cookies?
When it comes to leftover cookies, proper storage is critical to maintaining their freshness and deliciousness. One common mistake is leaving cookies out on the counter, where they are vulnerable to air exposure and can quickly become stale.
Instead, store leftover cookies in an airtight container, like a Tupperware or sealable bag. This will keep out unwanted air and help maintain the cookies’ freshness for several days.
Be sure to separate different types of cookies in their containers to avoid mixing flavors. Additionally, placing a piece of bread in the container with the cookies can help absorb any excess moisture and keep them soft.

- ½ cup sugar-free marshmallows (plus a handful for the top of the cookies)
- ½ cup chunk dark chocolate
- 2 eggs
- ⅔ cup granulated golden monk fruit (or raw sugar if desired)
- ⅓ cup melted butter
- ⅓ cup dark chocolate chips
- 1 tsp vanilla extract
- 1 tsp baking powder
- Preheat the oven to 350 degrees. Add parchment paper to the baking sheet.
- Beat the eggs in a bowl, then add the melted butter, sweetener, vanilla, and baking powder. Whisk.
- Add the almond flour and stir until combined well.
- Fold in the marshmallows and the chocolate chips. Stir gently.
- Scoop out the dough using a cookie scoop and place the scoop on the baking sheet. Space the cookies 2 inches apart.
- Put the cookies in the oven and bake for 12 minutes. Take the cookies out, add the chunks of chocolate and marshmallows on top, and then bake for five more minutes. The edges will be golden, but the center will be soft. Don't overcook if you want a chewy cookie.
- Let the cookies cool before transferring them.
- Keep any leftovers in the fridge for up to 5 days.
