  • 2 ¼ Cup(s) almond flour
  • ½ Cup(s) sugar-free marshmallows plus a handful for the top of the cookies
  • ½ Cup(s) chunk dark chocolate
  • 2 eggs
  • Cup(s) granulated golden monk fruit or raw sugar if desired
  • Cup(s) melted butter
  • Cup(s) dark chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions
 

  • Preheat the oven to 350 degrees. Add parchment paper to the baking sheet.
  • Beat the eggs in a bowl, then add the melted butter, sweetener, vanilla, and baking powder. Whisk.
  • Add the almond flour and stir until combined well.
  • Fold in the marshmallows and the chocolate chips. Stir gently.
  • Scoop out the dough using a cookie scoop and place the scoop on the baking sheet. Space the cookies 2 inches apart.
