Is it hard to freeze cookies?

Freezing cookies can be a convenient way always to have a batch of your favorite treats. However, the question on many bakers’ minds is whether it’s hard to freeze cookies.

The answer is no, it’s pretty easy!

Simply allow your cookies to cool completely before placing them in an airtight container or freezer bag. Be sure to label and date the container to track when they were frozen.

When you’re ready to indulge, take the cookies out of the freezer and let them thaw at room temperature for a few hours or overnight.

There’s no need to sacrifice the freshness and taste of your cookies with the ease of freezing.

Get ready for a treat with this Almond Flour S’mores Cookies Recipe! These gluten-free cookies combine gooey marshmallows, melty chocolate, and almond flour magic for a unique twist on the classic s’mores. Perfect for dessert lovers, this easy cookie recipe is a must-try for anyone craving a sweet, allergen-friendly indulgence!

Ingredients

  • 2 ¼ cup almond flour
  • ½ cup sugar-free marshmallows (plus a handful for the top of the cookies)
  • ½ cup chunk dark chocolate
  • 2 eggs
  • ⅔ cup granulated golden monk fruit (or raw sugar if desired)
  • ⅓ cup melted butter
  • ⅓ cup dark chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat the oven to 350 degrees. Add parchment paper to the baking sheet.
  2. Beat the eggs in a bowl, then add the melted butter, sweetener, vanilla, and baking powder. Whisk.
  3. Add the almond flour and stir until combined well.
  4. Fold in the marshmallows and the chocolate chips. Stir gently.
  5. Scoop out the dough using a cookie scoop and place the scoop on the baking sheet. Space the cookies 2 inches apart.
  6. Put the cookies in the oven and bake for 12 minutes. Take the cookies out, add the chunks of chocolate and marshmallows on top, and then bake for five more minutes. The edges will be golden, but the center will be soft. Don't overcook if you want a chewy cookie.
  7. Let the cookies cool before transferring them.
  8. Keep any leftovers in the fridge for up to 5 days.
