My boys are all about adding rice to recipes. I’m amazed at how much they love rice, and it must be true because they always ask for it!

I’m fine with adding the shrimp because it’s a great protein – and I’m a shrimp fan. I also love the Greek flavoring, too!

It’s time to get out of the mindset that salads must only be a bed of lettuce. This easy shrimp salad recipe proves otherwise!

How do I know when the shrimp is fully cooked?

Cooking shrimp can be tricky, but with the proper technique, you can quickly determine when your shrimp is fully cooked. The key is to keep an eye on your shrimp as it cooks.

When you first put your shrimp in the pan, they will start translucent or grayish-pink, depending on their shell color. As they cook, they will start turning pink and begin to curl.

They’re done once the shrimp have curled and turned pink around.

Alternatively, you can also use a thermometer to check the internal temperature.

Fully cooked shrimp should reach a temperature of 145°F. Always properly cook your shrimp to avoid any risk of foodborne illness.

This Greek Shrimp Rice Salad Recipe is the perfect weeknight dinner.


  • About
  • 3 cups cooked rice
  • ⅓ cup cucumber
  • ⅓ cup tomato
  • ⅓ cup red bell pepper
  • ½ cup baby spinach
  • ½ cup fresh parsley
  • 2 Tbsp olive oil
  • 1/2 tsp dry dill
  • Salt/pepper
  • Juice of 1 lemon
  • Feta cheese- crumbled


  1. Cook the rice according to the directions on the package.
  2. Cut the tomato, cucumber, bell pepper, spinach, and parsley.
  3. Heat olive oil in a skillet and then add the shrimp plus 1/4 tso of the dry dill and salt and pepper. Cook for 3-5 minutes until the shrimp is pink and cooked.
  4. In a bowl, combine the shrimp, cooked rice, and chopped veggies.
  5. Top with lemon juice, 1/4 tsp of dry dill, and feta cheese. Toss.
