- 1/2 cup vegetable oil
- 3 large eggs
- 1-3.-ounce box of lemon pudding
- Purple, pink, blue and black food coloring gel
- 1 1/2 sticks of softened salted butter
- 3-4 cups powdered sugar
- 3 tablespoons Hostess Twinkies Coffee Creamer
- Galaxy Sprinkles
- Preheat the oven to 350 degrees. Add cupcake liners to a cupcake pan.
- Add the pudding and cake mix to a large mixing bowl. Use a mixer and mix the oil, water, and eggs on medium speed.
- Spread the batter evenly between four mixing bowls. Add the pink food coloring to one, blue to the other, purple to the third, and black to the fourth bowl.
- Add the colored batter into the cupcake tin until each is 2/3 full. Put the pan in the oven and bake for 18-20 minutes or until an inserted toothpick comes out clean. Let the cupcakes cool completely before adding frosting.
- To make the frosting, cream the butter in a bowl for 2 minutes until light and fluffy.
- Slowly mix in the powdered sugar 1 cup at a time, alternating with 1 tablespoon of Twinkie coffee creamer. Mix until stiff peaks form.
- Add the frosting to the piping bag and frost the cupcakes. Add sprinkles.
