My boys are all about the beef. They love this recipe because it’s the right size pieces of vegetable and beef to get both tastes in each bite.

I love making this because it’s a great way to add more veggies into the diet of our crew, which sometimes feels like it’s tough to do!

This could easily be a winter or summer recipe, depending on your craving. When you have an option this good, why wait to make it?

What is the best beef cut for braised beef?

When it comes to braised beef, the proper cut of meat can make all the difference. While many delicious options are available, a few cuts are particularly well-suited to slow-cooking in flavorful broth or wine.

One of the best cuts for braised beef is the chuck roast. This meat cut comes from the cow’s shoulder area and is marbled with fat, which helps it stay moist and tender during the cooking process.

Other good options include brisket, short ribs, and shank.

No matter which cut you choose, give it plenty of time to cook low and slow for maximum tenderness and flavor.

Why is my braised beef tough?

Few things are disappointing than eagerly diving into a plate of braised beef only to find it tough and chewy.

While several factors can contribute to tough meat, one of the most common causes of this problem is simply cooking the beef for too short a time.

Braising is a cooking method that takes time and patience, as it involves cooking the meat over low heat to break down the tough connective tissue and create a tender and flavorful dish.

However, if the beef is not cooked for long enough, those tough muscles and tissues won’t properly break down, resulting in unpleasantly chewy meat.

So the next time you cook a batch of braised beef, give it plenty of time to cook low and slow for the best possible results.

Braised Beef Burgundy Recipe

This Braised Beef Burgundy Recipe is a great comfort food for the whole family. Loaded with beef and veggies.

Ingredients

  • 6 slices of diced thick-cut bacon

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 
Sea salt and black pepper, to taste

  • 1 chopped red onion

  • 1 cup frozen pearl onions
  • 
2 large carrots, sliced diagonally
  • 
3-4 minced garlic cloves

  • 8 ounces of chopped white mushrooms
  • 
3 Tbsp of almond flour

  • 1 Tbsp of tomato paste

  • 3 cups of dry red wine
  • 
1½ cup of beef broth

  • 2 bay leaves

  • 4 sprigs fresh thyme
  • 
¼ cup of chopped fresh parsley

Instructions

  1. Preheat the oven to 325 degrees and put the oven rack in the middle position.
  2. Put a Dutch oven over medium heat. Add the bacon and cook. Stir occasionally so that they don't burn. Cook until crispy, which will take about 4-5 minutes.
  3. Put the bacon onto a paper-lined plate to soak up the grease.
  4. Drain and eliminate all but one tablespoon of the bacon grease and then add the beef—season with salt and pepper. Stir occasionally until the beef is browned on all sides, taking about 4-5 minutes.
  5. Take out the beef and put it on the same plate as the bacon.
  6. Add the pearl onions, red onions, garlic, and carrots. Cook and stir occasionally until the veggies are fragrant and translucent. This will take about 4-5 minutes.
  7. Add the mushrooms and then sprinkle with almond flour. Cook, and stir frequently. This will take about 1-2 minutes. You are wanting to mixture to thicken.
  8. Put the bacon and the beef back into the Dutch oven, and then add the red wine, beef broth, tomato paste, bay leaves, and fresh thyme. Add more salt and pepper if needed. Stir.
  9. Turn the heat to medium-high and bring to a gentle boil. Stir occasionally. Take the Dutch oven off the heat, cover it, and transfer it into the preheated oven. Cook for 2 1/2 - 3 hours, and stir the mixture every 40-50 minutes.
  10. Remove from the oven, discard the sprigs and leaves. Top with fresh parsley and serve.
