- 1 ¼ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 ¼ cups granulated sugar, divided
- 2 teaspoons pumpkin pie spice
- ½ cup pumpkin puree
- ¼ cup milk

- Pour the hot water over the top, but DO NOT MIX. Put the pan in the oven and bake for 40 minutes or until the center is firm.
- Let it cool for 10-15 minutes and then serve with ice cream or whipped cream.
