When it comes to baking muffins, there are many debates about whether you need muffin liners. Although most people think of them as essential for a successful bake, the truth is that there are plenty of ways to make muffins without using them.

For a classic feel, try greasing your tin with butter and flour directly before pouring in the batter – this will give you thick, golden-domed tops just like traditional bakery muffins!

Alternatively, if you don’t want any extra fat in your muffins but still want to avoid sticking (and save yourself some clean-up time!), try baking paper cups instead.

Yield: 24 mini muffins or 12 regular muffins
Prep Time: 10 minutes
Cook Time: 20 minutes

This Mini Muffin Recipe is a great way to feed a crowd. Perfect for a snack, baby shower, birthday party, and more!

Ingredients

  • ¼ cup ground flax seed
  • ¾ cup quick-cook oats
  • 1 cup oat flour
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 large mashed bananas
  • 1 egg
  • 1/3 cup brown sugar
  • ½ cup creamy peanut butter
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • ½ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees. Add muffin liners to the muffin pan.
  2. Mix the oats, flax seeds, oat flour, salt, baking soda, baking powder, and cinnamon in a bowl. Whisk.
  3. Add the egg, brown sugar, peanut butter, milk, vanilla extract, and mashed banana in a different bowl. Whisk.
  4. Mix the wet and dry ingredients.
  5. Fold in the mini chocolate chips.
  6. Scoop the batter in the muffin liners, 2/3 full.
  7. Bake the muffins for 8-10 minutes. If you make regular muffins instead of mini, bake them for 18-20 minutes.
  8. Let the baked muffins cool in the pan for 5 minutes, then move them to a wire rack to cool.
