Banana Chocolate Chunk Muffins Recipe
This Banana Chocolate Chunk Muffins Recipe is the perfect way to make an easy breakfast or a to-go snack!
- 2 large mashed ripe bananas
- ¾ cup of natural almond butter
- ¼ cup of real maple syrup
- 1 large egg
- 1 tsp vanilla extract
- 1 Tbsp coconut flour
- ¼ tsp baking soda
- ¼ tsp salt
- 1 (3-ounce) bar unsweetened baking chocolate, chopped into pieces
- Preheat the oven to 350 degrees. Add muffin liners to your muffin tin.
- Mix the almond butter, bananas, syrup, egg, and vanilla in a bowl and whisk until it is fairly smooth.
- Add the coconut flour, salt, and baking soda and stir. Fold in the chocolate evenly.
- Add the batter to the muffin cups and then cook for 18-20 minutes. A toothpick inserted should could out clean when they are done baking.
- Take the muffins out of the oven and let them cool for 10-15 minutes.
