How to Make Tilapia Veracruz:
So, this is silly, but I really want to spell it out for you, because I want you to know–this is no typo.
Add your ingredients together, except the fish, in a medium bowl and stir them together. Stir in tomatoes–everything, including your garlic powder, lime juice or lemon juice, olive oil, salt and pepper or even red pepper–whatever you’re going to include, although my recipe is pretty simple.
Then pop your fish fillets onto the bottom of a baking dish, pour the sauce over your fish and bake. Less than 15 minutes–heck, less than 5 and you can be ready to pop it in the oven.
Other recipes call for sautéing olive oil over medium high heat, add onion and all your other stuff then reduce heat and simmer for like 4 hours–but there’s no sense in that. There’s no need to do that with this recipe.
Just preheat your oven, toss together your ingredients and BAM! you’re done.
Perfect for serving as-is, or you can make it into Tilapia Veracruz fish tacos or a casserole. Just 20 minutes and it’s ready to go!

Tilapia Veracruz
This easy Tilapia Veracruz is one of the most simple, but rich and flavorful fish recipes I've ever had the pleasure of making--or tasting!
Ingredients
- 1 15-Ounce Can Of Crushed Tomatoes
- 1/2 Cup of Chunky Salsa (mild or medium)
- 1 Clove of Garlic, minced
- 2 Tbs. Italian Parsley, chopped
- 1/2 tsp. Dried Oregano
- 1-1/2 Tbs. Kalamata Olives, quartered
- 1/4 Cup Raisins
- 1 Tbs. Capers
- 1 Tbs. Pepitas (pumpkin seeds), dry roasted and salted
- 4 Frozen Tilapia Filets (do not thaw)
Instructions
- Preheat the oven to 325 degrees and prepare a glass baking dish by lightly spraying with cooking spray. Set aside.
- Combine all of the ingredients, except for the fish to a medium sized bowl and stir until thoroughly mixed into a sauce.
- Place the tilapia filets in the bottom of the baking dish.
- Spread the sauce over the tilapia filets.
- Cover the baking dish with aluminum foil.
- Bake for 30 minutes.
- Remove the foil from the baking dish and return the fish to the oven to bake for an additional 10 minutes.
- Remove from the oven and serve immediately.
