Idaho is a northwestern state and has lots of lush land for farming, as well as lakes, mountains, wide valleys, and wild animals.

These all play a role in the food culture of Idaho by providing wild bison, fresh trout, and an abundance of vegetation like huckleberry bushes.

The up-and-coming chefs in Boise, the capital of Idaho, use these naturally occurring food sources to make amazingly flavorful dishes.

Huckleberry Ice Cream 

Huckleberries are dark blueberries that grow on bushes typically in mountainous areas. They taste a bit like blueberries but are sweeter. They change the color of this ice cream to a dreamy purple and taste amazing! 

Finger Steak 

You’ve heard of chicken fingers, but in Idaho, they go a step further and make finger steaks. They are thin pieces of steak coated in breading and fried and are popular all over the state. 

Sturgeon

Fresh fish is abundant in Idaho because of all the lakes in the area. Sturgeon is one of their favorites. 

Red Flannel Hash 

Red flannel hash is made with beets, corned beef, and potatoes in a hash-style meal. It’s often served with a fried egg right on top.  

Bison Burger  

 Wild game like bison is popular in Idaho especially in the form of burgers. You can find them at pubs and upscale restaurants alike. 

    

 

Cherry Pie  

Cherry orchards can be found all around the state and contribute to many of the desserts and even some main dishes. These cherry pie recipes are to die for! 

       

 

Trout 

Trout is a milder fish that is best served after pulling it out of a lake and cooking it over an open fire. If you can’t get that close to the source, you can also get it at restaurants and fresh-caught in local grocery stores. If you don’t live in Idaho, buy frozen trout. It will have the best flavor. 

Croquetas 

Spanish-style balls of ham and cheese in breading and then fried are popular in Idaho. These poppable bites are hot and delicious. 

Poutine  

Canadian-French poutine is made by pouring sauce, like gravy, over hot and crispy french fries. They are a sticky and delicious mess! 

Butter Cake 

Butter cake is best served nice and gooey with a scoop of vanilla ice cream.
