Fruit salsa is so underused. I can’t believe how many people don’t make this dip using their seedless watermelons. It’s seriously the best summer salsa recipe, ever.

Combining the red onion and the jalapeno adds a nice kick to the sweetness of this recipe. Then pair that with diced watermelon and the lime zest or juice and you’ve got quite the dip to try.

It’s no secret that we eat a ton of food in our house, but this is one dish that you don’t ever have to worry about having any leftovers. I also love how the flavor can vary as well depending on the sweetness of the watermelon.
