We’ve been a fan of cupcakes for a very long time. I love the texture of cupcakes, and my boys love when I pile the frosting on super high.

When we get to bake a cupcake recipe this good, it’s just too hard to pass up. Plus making our frosting from scratch is the icing on the cake!

This is the one to make when you’re craving a homemade cupcake recipe. It’s easy, it’s fast, and it’s so good and full of flavor!

Fresh strawberries are typically in season during the summer months, with the exact timing depending on your location.

For those in the northern hemisphere, the season typically runs from late April through June, while those in the southern hemisphere can enjoy them during November and December.

Whether you enjoy them on their own, as a topping on your favorite dessert, or blended into a refreshing smoothie, there’s no denying that the best strawberries are those in season.

This Strawberry Crunch Cupcakes Recipe has the best strawberry flavor - and homemade frosting!

Ingredients

  • 1 ⅔ cup of sugar
  • ½ cup of unsalted butter, softened
  • 6 large egg whites
  • 2 cups of all purpose flour
  • 2 ½ tsp Baking powder
  • 1 tsp vanilla
  • ½ tsp Salt
  • 1 ¼ cup of cold milk
  • ¼ cup of vegetable oil

Strawberry Crunch Frosting Ingredients:

  • ½ cup of unsalted butter, softened
  • ½ cup of shortening
  • ½ tsp of Salt
  • 1 Tbsp milk
  • 1 tsp Vanilla
  • 4 cups of powdered sugar
  • 1 tsp Strawberry emulsion (optional)
  • 1 - 4 oz package freeze dried strawberries
  • 12 golden Oreos
  • Fresh strawberries

Instructions

  1. Preheat the oven to 350 degrees. Line a cupcake pan with cupcake liners.
  2. Cream the butter and sugar together in a bowl. Add the egg whites, oil, and vanilla. Mix well.
  3. Whisk the flour, sugar, salt, and baking powder separately.
  4. Combine the dry ingredients with the wet ingredients. Add the milk and mix on low for one minute. Stop the mixer, scrape the sides, and mix on medium speed for another minute.
  5. Fill each cupcake liner 2/3 full. Put the pan in the oven and bake for 14-16 minutes.
  6. Let the cupcakes cool.
  7. Mix the butter, salt, and shortening until smooth to make the frosting.
  8. Add the milk, powdered sugar, and vanilla. Mix on low until the powdered sugar is almost fully incorporated. Scrape the sides of the bowl and then mix on medium speed for another minute until fluffy.
  9. Add the frosting to a pastry bag with a tip.
  10. Add the Oreos to a blender to make the strawberry crunch, then put it into a bowl. Crush the freeze-dried strawberries, then add the crushed Oreos and strawberries to a bag.
  11. Add the strawberry emulsion.
  12. Seal the bag and toss for a minute. Scrunch and shake until it is all combined well.
  13. Slowly squeeze the frosting onto the cooled cupcakes, starting at the outer edge and working in.
  14. Add a pinch of the crunch topping and then slice the strawberries and place them on top. Gently press in so that it sticks.
