How long should you cook pot roast in the slow cooker on high?

Cooking on low for 8-10 hours will produce a much more tender (and flavorful) pot roast. However, sometimes time just won’t allow it, will it?

In those instances, you can crank your Crockpot up to high and get that pot roast done in much less time. The general rule of thumb for cooking a roast in a slow cooker is about an hour and a half per pound of meat. So, a 3 pound roast would take approximately 4.5 hours on high.

How do you know when slow cooker pot roast is done?

Just because there is a rule of thumb, doesn’t mean there aren’t the occasional exceptions. So, you want to be sure that your pot roast is actually done before you bite into it, right?

Unfortunately, when meat is slowly brought to temperature, it doesn’t always “roast”, so some of the meat may have a pinkish tinge. That doesn’t mean it isn’t done!

Is your pot roast beef or pork? The answer can be super long and complicated, but if roasting your pork on a crockpot, you basically want the meat to fall off the bone. IF it doesn’t, keep cooking it. You can also stick a meat thermometer into the thickest part. You are looking for a minimum temperature of 180 degrees Fahrenheit.

If you are cooking a beef pot roast, you will probably want to shoot more for 195 degrees Fahrenheit in order to break the collagen down enough for it to break away from the bone.
