What I love about making this DIY popcorn balls recipe is that it’s really good and super fast.

Because during the holiday season, who has time to make much of anything else?

When I can whip up an easy Grinch-themed snack that everyone will love, that’s a massive win in my book.

Is this a traditional DIY popcorn ball recipe?

Not really. This is more like a hybrid recipe between Rice Krispie treats and traditional popcorn balls. Whereas traditional popcorn balls are more complex, calling for corn syrup, candy thermometer, dropping some of your mixture in cold water to see if it is heated enough…ugh – no time for that today.

No, it’s a lot easier to melt some mini marshmallows in a large pot over medium heat, drop in the popped popcorn and stir. Then you just remove it from the heat and stir, transferring it to a large bowl to cool for a second until you can handle it. To make the actual balls, you just spray your hands with cooking spray and roll the popcorn into balls and drop them on a baking sheet.

It’s that easy – a little food coloring and you’ve got the perfect Grinch Who Stole Christmas treat.

Grinch Popcorn Balls

Yield: 6-8 Grinch Popcorn Balls

These easy Grinch popcorn balls are the easiest way to make a unique and fun Grinch treat for a holiday movie night!

Ingredients

  • 6 cups Popped Popcorn
  • 2 cups Mini Marshmallows
  • 1/2 cup Butter
  • 1 tsp Vanilla Extract
  • 3-4 drops Green Gel Food Coloring
  • 1/2 tsp Peppermint Extract
  • 1/2 tsp Salt
  • 1/4 cup Red Heart Sprinkles

Instructions

  1. In a large pot over medium heat, add the marshmallows and butter, stirring until melted completely.
  2. Remove from heat and add vanilla, peppermint and food coloring. Stir until combined completely.
  3. Add popcorn and stir until all of the popcorn is covered completely.
  4. Add sprinkles and stir. Allow to cool until it can be safely handled.
  5. Spray your hands with cooking spray and form the popcorn into 1 1/2 cup balls, placing each ball on a baking sheet to cool completely. Then serve!
