My household is all about brunch recipes! Making scones is a great way to give everyone a fun flavor they can enjoy.

Scones aren’t overly sweet but still have a ton of flavor. My boys will eat theirs with a cup of milk, but I prefer to have a bit of tea or coffee.

No matter how you decide to eat this treat, know that you can’t go wrong. It’s a fast and easy recipe that produces a simple and delicious taste!

What makes a scone a scone?

A scone is typically denser than a flaky croissant or light, fluffy muffin. This is because scones are made with less butter and sugar than these other treats.

Additionally, scones often contain mix-ins like nuts, fruit, or chocolate chips, adding an extra layer of flavor and texture.

Another critical characteristic of scones is their triangular shape, which supposedly dates back to the Scottish origins of this pastry. But perhaps the most defining trait of a traditional scone is its signature flaky texture achieved by incorporating a combination of flour, baking powder, and salt.

Overall, a scone is a comforting pastry that offers just the right amount of sweetness without overpowering, making it the perfect choice for a cozy breakfast or afternoon tea.

What is the secret to making good scones?

Some might say it’s all in the butter, while others swear by the perfect ratio of flour and sugar. But the most important element of any great scone is the technique.

It’s important to handle the dough with care, gently folding and kneading the ingredients until they come together in a cohesive, crumbly mixture.

There’s no one-size-fits-all answer to this question, but with a little practice and plenty of experimentation, you’ll be well on your way to creating the perfect batch of scones.

Ingredients

  • 2 ¾ cup all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ¼ cup brown sugar
  • 3 tablespoons white granulated sugar
  • ½ cup unsalted cold and cubed butter
  • ½ cup canned pumpkin puree
  • 3 ½ tablespoons buttermilk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 tablespoon half and half

Glaze Ingredients:

  • 1 cup powdered sugar
  • 2 tablespoons half and half

Pumpkin Glaze Ingredients:

  • 1 cup powdered sugar
  • 1 tablespoon pumpkin puree
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon ginger
  • ½ tablespoon half and half

Instructions

  1. Preheat the oven to 425 degrees.
  2. Add parchment paper to a baking sheet.
  3. Mix the salt, white sugars, baking powder, baking soda, and spices together in a bowl, using a whisk.
  4. Add the cubed butter and blend with a fork or pastry cutter. The butter needs to be crumbly and pea-sized.
  5. In a different bowl, add the egg, pumpkin puree, vanilla, honey, and buttermilk. Whisk.
  6. Go back to the bowl with the dry ingredients and make a well in the middle. Pour the wet pumpkin mixture into the well.
  7. Fold together until a dough has formed.
  8. Place the dough onto a clean surface, but don't need it. Simply form the dough into a round disc and flatten it lightly.
  9. Cut the disc into 6 triangle shapes.
  10. Place each scone onto the baking sheet and brush each piece with half and half.
  11. Place the baking sheet in the oven and bake for 13-15 minutes or until browned lightly on top.
  12. Take out of the oven and let the scones cool for about 5 minutes or so.
  13. To make the glaze, mix the half and half and powder sugar in a bowl. Whisk.
  14. In a different bowl, make the pumpkin drizzle by adding the powder sugar, and spices to a different bowl.
  15. Once the scones are cooled down, glaze with the vanilla glaze.
  16. Then, drizzle the pumpkin glaze on top.
  17. Let the glaze harden and enjoy!
