I lost some weight over ten years ago and was determined to keep it off.  Ever since then, I’ve made a hobby out of collecting recipes from a variety of sources and then adapting them for lower calorie, carb, and fat content.  I have a very picky husband, so the recipes have to be tasty, too!  Since I always seem to have other things to spend my time on besides cooking, I look for quick and easy-to-prepare meals.

Breaded Salmon (Low Calorie) Recipe

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 1 1/4 lb. salmon
  • 1 tsp. thyme
  • 1 tsp. tarragon
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. lemon juice
  • 1 tbsp. olive oil
  • 1/4 cup panko bread crumbs

Instructions

  1. Preheat oven to 425 degrees.
  2. Combine seasonings with lemon juice and rub on salmon.
  3. Mix bread crumbs and olive oil in a small bowl or measuring cup.
  4. Coat salmon with mixture.
  5. Bake for 15 minutes.
