I lost some weight over ten years ago and was determined to keep it off. I have a very picky husband, so the recipes have to be tasty, too! Since I always seem to have other things to spend my time on besides cooking, I look for quick and easy-to-prepare meals.

Here is one of my most popular recipes if you’d like to give it a try!
- 1 1/4 lb. salmon
- 1 tsp. thyme
- 1 tsp. tarragon
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. lemon juice
- 1 tbsp. olive oil
- 1/4 cup panko bread crumbs
Preheat oven to 425 degrees.
Combine seasonings with lemon juice and rub on salmon.
Mix bread crumbs and olive oil in a small bowl or measuring cup.
Coat salmon with mixture.
Bake for 15 minutes.
