I found this recipe when I tried switching my usual quesadilla routine, and it changed my kitchen. Bacon quesadillas make a great snack for game night or a fast lunch.

This recipe makes a crunchy tortilla with just a bit of char. Inside, the cheese melts with yummy bacon pieces. The edges turn golden, and the cheese bubbles up in the pan. It looks good and tastes even better!

Bacon Quesadillas Recipe

I love this recipe’s flexibility—you can easily swap cheeses to match your liking. A sharp cheddar with mozzarella creates a bold flavor. Though I say to use Colby and Monterey Jack cheese, it doesn’t matter much! The bacon bits steal the spotlight by giving a salty crunch that works well with the creamy cheese.

It’s tempting to fill the quesadillas too full, but that’s not a good idea. Light fillings let the ingredients melt right, preventing everything from spilling out when you bite.

I enjoy adding a little green onion because it brings freshness, breaks the heavy feeling, and makes it look nice. Sometimes, diced jalapeños get tossed in for a bit of spice. My kids don’t like the heat, but my husband and I love it!

What’s the best way to crisp up the tortillas?

The key to perfectly crispy quesadillas is all about temperature control. I’ve found that medium heat is the sweet spot. It allows the cheese to melt slowly while the tortilla gets that golden-brown crispiness we all love.

Another trick I’ve learned is to use a cast-iron skillet if you have one. It distributes heat evenly, giving you that perfect crunch all around. If you’re using a regular pan, watch it and flip the quesadilla when the edges start to brown.

You can also brush the outside of the tortillas lightly with oil before cooking. This helps them crisp up evenly and subtly enrich the flavor. Be careful not to use too much oil, or your quesadillas might grow greasy!

Absolutely! I usually prepare a large amount during weekends for quick weekday lunches. The key is letting them cool thoroughly before putting them away. Each quesadilla gets wrapped in foil and stays fresh in the fridge for three days.

When it’s time to reheat, placing them in a dry pan over medium heat for a few minutes on each side restores their crunch. Another option is using a toaster oven. Stay away from the microwave, as it could turn them soggy. They taste best when fresh, but warming them up works when needed!

Crispy and cheesy, these Bacon Quesadillas are a quick and satisfying meal or snack packed with bold flavors. Perfect for game nights or busy weekdays, they’re easy to customize to suit any taste!

Ingredients

  • 4 flour tortillas (6 inch)
  • 1 cup Shredded Colby & Monterey Jack Cheeses
  • 1/4 cup Real Bacon Bits
  • 2 green onions thinly sliced

Instructions

  1. Heat oven to 400°F.
  2. Put tortillas in single layer on baking sheet sprayed with cooking spray.
  3. Cover half of each tortilla Cheese, bacon bits and onion, press together.
  4. Cook for 8 to 10 min. or until edges are golden brown.
