Wild Rice and Cranberry Bread Loaf Recipe

I have a bread machine that has been taking up valuable storage space for quite some time now.  I always want to make bread in it, but never find a recipe that sounds good.  Until now!  When asked if I would review the 300 Best Bread Machine Recipes Cookbook by Donna Washburn & Heather Butt, I jumped all over it!  Yes, yes, yes!  I wanted to be able to get comfortable with my bread machine so that I could figure out what it takes to make good bread.  Once I can do that, I can start doing my own thing.  Until I reach that point, though… I have 300 recipes that I can try out.  Plus, I was given permission to share a few of their yummy bread machine recipes with you!

This attractive loaf is sure to bring compliments. Its nutty taste is a real plus.

Ingredients
1.5 lb Loaf
  • 1 1⁄4 cup water 300 mL
  • 1⁄4 cup skim milk powder 50 mL
  • 1 1⁄4 tsp salt 6 mL
  • 2 tbsp liquid honey 25 mL
  • 1 tbsp extra virgin olive oil 15 mL
  • 3 cup all-purpose flour or bread flour 750 mL
  • 3⁄4 cup cooked wild rice 175 mL
  • 1⁄4 cup pine nuts 50 mL
  • 3⁄4 tsp celery seeds 3 mL
  • 1⁄8 tsp freshly ground black pepper 0.5 mL
  • 1 tsp bread machine or instant yeast 5 mL
  • 2⁄3 cup dried cranberries 150 mL
2 lb Loaf
  • 1 1⁄2 cups water 375 mL
  • 1⁄3 cup skim milk powder 75 mL
  • 1 1⁄2 tsp salt 7 mL
  • 2 tbsp liquid honey 25 mL
  • 1 tbsp extra virgin olive oil 15 mL
  • 3 3⁄4 cups all-purpose flour or bread flour 925 mL
  • 1 cup cooked wild rice 250 mL
  • 1⁄3 cup pine nuts 75 mL
  • 1 tsp celery seeds 5 mL
  • 1⁄8 tsp freshly ground black pepper 0.5 mL
  • 3⁄4 tsp bread machine or instant yeast 3 mL
  • 3⁄4 cup dried cranberries 175 mL
Instructions
  1. Measure all ingredients except dried cranberries into baking pan in the order recommended by the manufacturer. Insert pan into the oven chamber.
  2. Select Basic Cycle.
  3. Add dried cranberries at the “add ingredient” signal.

Makes 1 loaf

Tips: Prepare extra wild rice when cooking your favorite duck or goose dinner. Store in the refrigerator or freezer until needed.

Yes, you’re reading it right: The 1.5 lb (750 g) recipe contains more yeast than the 2 lb (1 kg).

  4. in my bread machine you have to use the fruit and nut setting for it to beep when it is time to add cranberries.

  5. Thanks for the recipe. Left out the cranberries this time, but so good….second loaf is baking now. : )
