Pulled Pork BBQ Nachos

We had Pulled Pork BBQ sandwiches a few nights ago and last night my husband was looking for something to cook.  Yes, he cooks also! Aren’t I lucky?

Anyway, he pulled the leftover pork out of the fridge and grabbed a bag of leftover Tostidos Tortilla Chips from the cabinet.  Then, he got this weird look on his face and said,

How do you think this barbequed stuff would be over these chips? Maybe with some cheese?

Like I told him… what’s the worst that can happen? So, he set to work and I took a picture just in case it turned out really good.

HA!  Good thing I took a picture before the boys followed their noses to the kitchen! It was devoured in about 3 seconds flat.  No one even made it to the table!

BTW, this would be a GREAT Super Bowl treat.

Pulled Pork BBQ Nachos Recipe

Cook Time: 7 minutes
Total Time: 9 minutes

Leftover pulled pork, salty chips, and creamy mozzarella make this irresistible!

Ingredients

  • Tostidos Tortilla chips
  • Pulled Barbeque Pork
  • Shredded Mozzarella Cheese

Instructions

    Put chips in the bottom of a cookie sheet.
    Spoon pork over chips
    Sprinkle cheese over all of it.
    Bake for 5-7 minutes at 350°

My daughter loves pulled pork type recipes, I would certainly try to make this for her.

I was impressed by my hubby - it was actually pretty good. Tripp (12) dipped his in Ranch, but the other two ate theirs as is. :-)
