Cook Time: 40 minutes
Total Time: 50 minutes

Start with a package of spice cake mix and add shredded zucchini for a "busy mom" version of sweet zucchini bread!

Ingredients

  • 1 18.25-oz. package spice cake mix
  • 1 1/4 cups milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups shredded zucchini approximately 1 medium zucchini

Instructions

    Preheat Oven to 350°
    Beat cake mix and next 3 ingredients at low speed with an electric mixer for 30 seconds.
    Increase speed to medium, and beat 1 minute, stopping to scrape bottom and down sides of bowl as needed.
    Stir in zucchini. Pour batter evenly into 2 (9- x 5-inch) lightly greased loaf pans.
    Bake at 350° for 35 to 40 minutes or until a long wooden pick inserted in center comes out clean.
    Cool in pans on a wire rack 10 minutes. Remove from pans to wire rack, and let cool 15 minutes before slicing.

Can you make this in a Bundt pan?

This recipe could be tried in a bundt pan. Typically, you have to cook bundt pan recipes a little bit longer, so check the bread at 40 minutes and see if it needs more time to bake. Using a clean toothpick is the best way to check the bread. If it's not done, add 5 minutes and check again, until done.

I had a box of spice cake mix and some frozen shredded zucchini that I wasn’t sure what to do with so I was so happy to find a recipe that took care of both. With this recipe I made one loaf and 10 cupcakes and both turned out delicious! Thanks for the easy recipe!
