Instructions to Make Unicorn Vanilla Ice Cream

You won’t believe how easy it is to make homemade unicorn ice cream—just whip, fold, swirl, and freeze!

  1. Whip the Cream
Start by beating the heavy cream until it forms stiff peaks. This step is key to achieving a light, fluffy texture.
  2. Mix the Base
Gently fold in the sweetened condensed milk and vanilla extract. This creates a creamy vanilla foundation.
  3. Divide and Color
Split the mixture into separate bowls. Stir in a few drops of different pastel gel food coloring to each batch.
  4. Layer and Swirl
Spoon dollops of each color into a freezer-safe dish. Use a knife to gently swirl the colors without fully blending them.
  5. Top with Sprinkles
Finish with a generous sprinkle of unicorn-colored confetti or jimmies!
  6. Freeze
Cover and freeze for at least 4–6 hours, or overnight, until firm.

Dessert Tips and Tricks

  • Use Gel Food Coloring – It gives vibrant colors without watering down the mixture.
  • Fold Gently – Keep the whipped cream fluffy by folding, not stirring, the base.
  • Chill the Dish – Pop your container in the freezer beforehand to speed up freezing time.

Troubleshooting Unicorn Vanilla Ice Cream

Ice cream too hard to scoop?
Let it sit at room temperature for 5–10 minutes before serving.

Colors blended too much?
Swirl gently with a light hand to keep colors distinct.

Sprinkles melting or bleeding?
Use quality jimmies or quins, not nonpareils, which tend to bleed in moisture.

FAQs about Unicorn Vanilla Ice Cream

Yes, but gel works best for brighter color without changing the texture.

Typically 4–6 hours, but overnight is ideal for a firmer scoop.

Keep it tightly covered in a freezer-safe container for up to 2 weeks.

Absolutely! They’ll love coloring, swirling, and decorating with sprinkles.

Unicorn Vanilla Ice Cream Storage and Reheating Tips

To store your pastel swirl ice cream, transfer it to a lidded, freezer-safe container. Press a piece of parchment directly on the surface to prevent freezer burn.

Reheating isn’t needed, of course, but if it’s too firm, just let it sit out for 5–10 minutes before scooping.

Fun Leftover Ideas:

  • Scoop between cookies for magical ice cream sandwiches.
  • Blend into a pastel milkshake.
  • Serve atop a warm brownie for a unicorn sundae moment.

Ingredients

  • 2 pints Heavy Whipping Cream
  • 14 Ounce(s) Sweetened condensed milk
  • 2 tsp. Vanilla
  • Unicorn colored sprinkles
  • Pink yellow and blue food coloring

Instructions

  • Begin by placing 2 pints of heavy whipping cream into a stand mixer bowl, and beat on high until the heavy whipping cream has gone just past making stiff peaks. This will help your ice cream hold its shape a bit more. Be sure not to whip your heavy cream too long, or you will begin to make butter.

  • Add 2 teaspoons of vanilla to the heavy whipping cream.

  • Pour in 14 ounces of sweetened condensed milk, and fold the mixture together until it is well combined.

  • Put on third of the ice cream mixture into a bowl, and add a few drops of blue food coloring. Stir the mixture lightly until the color is well incorporated.

  • Pour the blue colored ice cream mixture into a baking dish, and spread it out evenly.

  • Repeat steps 4 and 5 with the yellow and pink food coloring, layering the new colored ice cream mixture in the baking dish as you go.

  • Once you have layered all of the different colors, drag a butter knife through the ice cream mixture in the baking dish to lightly swirl the colors together.

  • Top the ice cream mix with some unicorn colored sprinkles of your choosing.

  • Place the mixture in the freezer for at least several hours, but overnight is best. Once it has set, dish out the ice cream as you normally would, top with more sprinkles, and enjoy!
