This is not your average potato salad!  The addition of Kale, apples, and creamy yet tangy MIRACLE WHIP takes your potato salad from boring to oh so wonderful!  

This is at the top of my list of easy apple recipes to make!

Kale and Apple Potato Salad

This simple salad is perfect for summer!

Ingredients
  

  • ¾ Cup(s) MIRACLE WHIP Dressing
  • 1 Tbsp. GREY POUPON Dijon Mustard
  • 2 tsp. cider vinegar
  • 2 lb. new red potatoes cut in quarters cooked & cooled
  • 4 Cup(s) coarsely chopped kale
  • ½ Cup(s) thinly sliced red onion
  • 2 apples cored and diced

Instructions
 

  • MIX dressing, mustard and vinegar until blended.
    COMBINE remaining ingredients in large bowl; Add dressing mixture; mix lightly.
    REFRIGERATE several hours or until chilled.
    Tip: Sprinkle with poppyseeds or diced, cooked bacon, if desired.
