– ground flax seed – quick-cook oats – oat flour – salt – ground cinnamon

Preheat the oven to 350 degrees. Add muffin liners to the muffin pan.

How to Make Mini Peanut Butter Banana Muffins

Mix the oats, flax seeds, oat flour, salt, baking soda, baking powder, and cinnamon in a bowl. Whisk.

Whisk the egg, brown sugar, peanut butter, milk, vanilla extract, and mashed banana in a different bowl.

Mix the wet and dry ingredients. Fold in the mini chocolate chips. Scoop the batter in the muffin liners, 2/3 full.

Bake the muffins for 8-10 minutes. If you make regular muffins instead of mini, bake them for 18-20 minutes.
