Fold in 1 cup of the Andes mints and then put the mix into the baking dish.Bake for 25-30 minutes. The center should be firm and the edges pull away from the pan.
Add in the vanilla and chocolate chips and stir.Take off the heat and pour it over the top of the brownies.Sprinkle with Andes mints and let set before serving.
