Beef and Salsa Casserole Recipe

This beef and salsa casserole is not too spicy for little kids and is the perfect dinner recipe for Cinco de Mayo! It can be thrown together quickly and even done beforehand!

Ingredients

– Ground beef or ground chuck for less fat – Frozen corn thawed and drained – Tortilla chips – Shredded Monterey Jack cheese – Chunky salsa – and more!

Preheat oven to 350 degrees.

How To Make Beef and Salsa Casserole

In a large skillet over medium heat, add the beef, seasoned salt, chili powder and black pepper.

Brown the beef until fully cooked and then drain off the fat.

Add the corn, mayonnaise and salsa and stir to blend.

Using a 2 quart casserole dish, layer the ingredients, distributing evenly.
