Bring to a boil then reduce and let set for 3 minutes or until candy thermometer shows 238 degrees.
Whisk in the baking soda and the vanilla. This will cause bubbles. Pour over the popcorn and toss.
Bake for 40 minutes in the oven, tossing halfway through. Take out of the oven and lift off the baking sheets with the parchment paper.
Once it has cooled down, drizzle with melted chocolate and Rolo. Let cool and set before eating.
