Baked Chicken and Rice Recipe

INGREDIENTS

- extra virgin olive oil - chicken breasts - red onion - long-grain brown rice - chicken broth

STEP 1

Preheat the oven to 350 degrees. Prepare a 9X13-inch baking dish with 1 T olive oil.

STEP 2

Heat the rest of the oil in a skillet over medium heat. Add the chicken breasts and season with pepper and salt.

STEP 3

Cook until the chicken is golden brown. About 3-4 minutes per side.

STEP 4

Add the diced onion and rice to the baking dish. Add salt and pepper and stir.

STEP 5

Pour the chicken broth over the rice and add the chicken breasts. Cover with aluminum foil and bake for 40 minutes.
