Once the cold weather hits, this Butternut Squash Soup Recipe is always on my mind. A hearty soup with a lightly sweet flavor is one of the best!

Ingredients

– butternut squash – olive oil – green onions – garlic – chicken breast – salt

Preheat the oven to 400 degrees. Add aluminum foil to a baking sheet.

How to Make Butternut Squash Soup

Grab the cut butter squash and put oil on the cut sides. Then sprinkle on salt, black pepper, thyme, and sage.

Put the squash face down on the baking sheet. Bake for 30-45 minutes. Let cool.

Cut the chicken into cubes. Put olive oil into a large soup pot on medium heat.

Saute the diced onions and garlic. This will take about 4 minutes.
