Yummy Instant Pot Chicken Tortilla Soup

The Instant Pot Chicken Tortilla Soup is so good! I made it one time and my family loved it so now it’s a staple in our house. We’ve actually starting doubling the recipe!

Cooking on high pressure with your pressure cooker makes this soup ready in just 30 minutes of time! Such a simple and delicious dish.

Using your Instant Pot makes this simple recipe a breeze. Make certain that you follow the cooking time and don’t forget to be careful when you do your quick release at the end. It’s literally as easy as adding in the ingredients and waiting for your Instant Pot to cook it all up!

Ingredients – Vegetable oil – Diced onion – Minced garlic – Chicken broth – Water – Taco seasoning mix

Instructions 1. Set your Instant Pot to saute and put in the oil. Once the oil is hot, add in the onions and saute for about 5 minutes. Then add in the garlic and saute for 1 minute.

2. Turn off your Instant Pot and put in the water and the chicken broth. Use a spatula and scrape the bottom of the pot to help deglaze it.

3. Add in the taco seasoning and mix with the liquid. 4. Next put in the tomatoes, chili beans, chicken, and corn. Stir.

5. Put on the lid to your Instant Pot and put the pressure cook for 30 minutes. Once the time is down, let the pressure release naturally for 10 minutes and then do a quick release the rest.

6. Take off the lid and take out the chicken breast. Shred and put back in the Instant Pot. Stir, and then serve.
