Instructions
In a large plastic bag, marinate the pork tenderloin in the marinade ingredients for at least 8 hours, preferably overnight.
Remove the pork tenderloin from marinade and grill over medium heat for 15 to 20 minutes, or until internal temperature is 160 degrees F.
Slice-cooked pork tenderloins for sandwiches. While the pork tenderloin is cooking, combine all of the aioli ingredients in a blender. Pulse just for a minute until everything is smooth ~ this can be done ahead of time & stored in the fridge/cooler if you are tailgating.
Lay a tomato slice on the bottom bun, then an onion slice, then the pork tenderloin on top. Spoon some of the aioli on top of the pork, top with the top of the bun. Dig in!
Notes
*If you are cooking at home & don't have access to a grill, the pork tenderloin can also be roasted in the oven at 300 degrees for 2 hours. Just put the pork tenderloin & the marinade in a large roasting pan, cook for 1 hour, turn the pork & cook for the final hour.
