Put the cheesecake on a cutting board and cut six even slices.
Put a popsicle stick into each slice on the wide end. Push it as far as you can without having it poke through the top.
Melt the white chocolate chips in a microwave-safe bowl for 20 seconds. Stir and heat as needed. Add coconut oil if you want it to be smoother. Do this until the chips are melted.
Hold one slice of cheesecake on a stick over the bowl of melted white chocolate. Use a spoon to smooth 2 tablespoons of white chocolate all over the cheesecake. You can leave the white end bare like I did, or cover it entirely. Up to you.
Put the cheesecake on a plate or baking sheet and add the sprinkles on top.
Repeat for all the slices.
The candy chips will take about 60 minutes to firm on the cheesecake. Once firm, serve and enjoy!
