Sesame seeds and fresh chopped green onions - garnish
Instructions
Cut the chicken into bite-sized pieces. Add the salt and pepper to taste.
Put the chicken pieces into a sealable plastic bag, and add 1/2 T of the Xanthan gum. Seal the bag and shake.
Put 1 T of olive oil and 1 tsp of sesame oil into a skillet and heat over medium-high heat.
Add the chicken pieces to the hot skillet. Don't overcrowd the skillet. This means that you might have to cook the chicken in a couple of batches.
Let the chicken sit for 3-4 minutes on one side, then flip and cook for another 2-3 minutes. Cook until done and seared well. The outside of the chicken should be a bit crispy.
As the chicken is cooking, add the brown sugar substitute, soy sauce, rice cooking wine, ginger paste, minced garlic, and 1 tsp of sesame oil to a bowl. Whisk.
Add a small pot of water to the stove and bring to a boil. Blanch the broccoli for 2-3 minutes.
Drain the cooked broccoli and put it into the skillet with the chicken.
Pour the sauce mixture over the top and cook for 1-2 minutes. Stirring to combine.
