Instructions
Combine the warm water, yeast, melted butter, salt, and sugar. Let the mixture bubble for 5 minutes.
Stir in 2 1/2 cups of flour plus 3/4 cup of the shredded cheese.
Slowly add and mix if you need to add more flour to form a dough.
Fold the dough out onto a clean surface and knead for 5 minutes.
Put the dough back into the bowl and cover it with a clean kitchen towel.
Put the bowl in a warm spot in your kitchen and let the dough rise for 15-20 minutes until doubled.
Preheat the oven to 475 degrees.
Add 4 cups of water to a pan on the stove and boil it. Dissolve baking soda in the water, then take it off the heat and cool until it is warm.
Divide the pretzel dough into 8 pieces equal in size, then knead the diced jalapeno peppers into each piece.
Roll the sections into 1-inch thick ropes.
Cut the rope into 1 1/2-inch long pieces.
Put the pretzel bites in the warm baking soda water for 2 minutes, and then add them to a baking sheet lined with parchment paper.
Sprinkle the pretzel bites with cheddar cheese. Bake for 8-10 minutes or until they turn golden brown.
To make the honey mustard dip, mix all the ingredients. Taste and adjust.
