Instant Pot Bananas Foster Cheesecake Recipe

Ingredients
Crust
• 1 cup of vanilla wafers
• 4½ T of butter
• ½ cup of brown sugar
Cheesecake filling
• 3 packs of softened cream cheese
• 1 cup of granulated sugar
• 3 T all-purpose flour
• ¾ cup of sour cream
• 1 t of banana extract
• 1 t of rum extract
• 3 eggs at room temp
Cheesecake Topping
• 1 cup of brown sugar
• 6 T of butter
• ½ cup of heavy cream
• ½ t of salt
• ½ t of banana extract
• ½ t of rum extract
• 1 cup of bananas that are sliced
Instructions
To make the CrustMix together all the crust ingredients.
Spray an 8-inch springform pan with nonstick spray.
Put the crust mixture into the pan and press in. Pop into the freezer.
To make the Cheesecake filling
Mix the cream cheese and sugar with a mixer.
Add in the flour, sour cream, banana extract, and rum extract and mix well.
Add in eggs one at a time and blend.
Put 1 1/2 cups of water in the bottom of the Instant Pot.
Put the cheesecake filling into the crust. Cover with foil, seal the edges. Place pan on the trivet and put in the Instant Pot.
Sea the lid and set the timer for 45 minutes on high.
Let natural release for 10 minutes and the middle should be jelly-like.
Let cool on a wire rack.
To Make the Topping
Add the sugar to a saucepan and heat over medium heat. Stir the whole time and do not burn.
Put in the butter and stir and melt.
Cook for 1 minute without stirring.
Add in the whipping cream slowly and stir. Once added, stop stirring and let it boil for 1 minute.
Take off of the heat and stir in the rum extract, salt, and banana extract. Allow cooling.
Put the sliced bananas on the top of the cheesecake.
Pour topping over the top.
Let cool before slicing.
