Instructions
Preheat the oven to 400 degrees. Add parchment paper to a baking sheet.
Add the potatoes, onions, garlic, olive oil, and fresh rosemary in a mixing bowl. Season with salt and pepper. Put the veggies on the baking sheet.
Add the chicken thighs to the bowl of seasoning and ingredients and coat. Add any remaining rosemary and olive oil and cat. Add more salt and pepper if needed.
Put the coated chicken on the baking sheet in between the veggies and lemon slices and fresh thyme.
Put the pan in the oven and roast for 30-35 minutes. Remove from the baking sheet and stir in the fresh kale.
Put the sheet back into the oven and roast for another 10-12 minutes, until the chicken is thoroughly cooked.
Remove and put the chicken and potatoes on a serving platter and cover loosely with foil.
