Instructions
To Make the Cookies
Start by cutting the butter into the flour. The butter pieces should be the size of small peas.
Grab the dried cranberries and stir them into the mixture along with the orange zest and cottage cheese. This should form a ball of dough.
Put in the fridge and let it chill for 1 hour.
Preheat the oven to 400 degrees.
Put parchment paper on a baking sheet and roll out the dough so that it's 1/8 inch thick.
Cut the cookies. I used a 2 1/4 inch cookie cutter to do this. You'll have leftover scraps of dough that you can reroll and cut to make more cookies.
Put them on the baking sheet and add them to the center rack of the oven. Bake for 15 minutes or so.
Take out and put on a wire rack for cooling time.
To Make the Icing
Mix the butter and cream cheese until fluffy.
Add in the extract and powdered sugar and stir.
Stir in a tad bit of water, milk, or orange juice if you need to thin it out.
Use a whisk to drizzle the homemade icing over the top of the cookies.
