Instructions
Add a tablespoon of chicken stock and the diced onion to a stockpot.
Heat over medium heat until the onion is translucent, about 5 minutes.
Add the broccoli florets and cook until wilted, about 2 minutes.
Pour in the milk and remaining chicken stock.
Bring to a boil and then reduce heat to a simmer. Sprinkle in cheese and heat until the cheese is mostly melted.
