Mix the cream cheese and butter until fluffy. Add the lemon extract and 2 Tbsp of the lemon zest. Mix lightly.
Add the egg and mix until just combined.
Pour in the cake mix and mix well.
Fold in the blueberries so that they don't break apart. Do not overmix.
Put plastic wrap over the top of the bowl and put the dough in the fridge to chill for a few hours. This will cause the sticky cookie dough to firm.
Preheat the oven to 375 degrees. Add parchment paper to a baking sheet.
Roll the cookie dough into balls that are smaller in size. Space them out on the parchment paper and leave about 3 inches between each cookie.
Put the cookies in the oven and bake for about 20 minutes or until they are turning golden brown. Put them on the center rack in the oven while they are baking.
Take the cookies out and let them cool on the pan for 10 minutes. Then move them to a cooling rack.
