Start by setting the bottom rack in your oven to the bottom 3rd rack and a second bottom 3rd rack needs to be moved up to the top of the 3rd. Once done, preheat the oven to 400 degrees and grab two baking sheets. Line with parchment paper.
Grab a large bowl and add in apples, red onion, sage, fennel, 2 T of olive oil, and the balsamic vinegar. Then, once that is done, add salt and pepper and combine until everything is coated.
Once mixed, spread out the mixture onto one of the prepared baking sheets and then put in the oven and roast on the bottom rack for 10-15 minutes.
While the first pan is roasting, put the pork tenderloin in the middle of the other baking sheet and brush it with the remaining oil. Season with salt and pepper.
When you start to notice the first pan of veggies and apples starting to get some color, put the seasoned pork tenderloin onto the top rack and roast it for about 15 minutes before turning the pork. Cook it then for another 10-15 minutes and make certain that it's cooked all the way through.
Take out both pans and let the pork rest for 10 minutes. Once that passes, slice and serve with the veggies and apples.
Notes
Always cook meat to temperature, and don't go just by time. Pork should have an internal temp of 145 degrees at a minimum to be considered safe to eat.
