Add the oil to a frying pan and heat it over medium-high heat.
Add the sugar, flour, baking powder, cinnamon, and salt to a bowl. Whisk.
Make a well in the middle of the dry ingredients and add the milk, applesauce, and eggs. Whisk to form a thick batter.
Pour the apples in and fold them together.
Add 1/4 cup of the batter into the hot oil. Spread it slightly in the oil and cook it for 2 minutes on each side or until the fritter is deep golden brown.
Remove them from the oil and put them on a paper towel to drain excess oil. Repeat to cook all fritters.
Combine the cinnamon, powdered sugar, and brown sugar in a bowl to make the glaze. Whisk to combine.
Add the vanilla and milk and whisk. If you need to thin it, you can add a tad bit more milk.
Add parchment paper to a baking sheet and put a cooling rack on top.
Take each fritter and dip it into the glaze. Flip it over to coat the entire thing, then shake off any excess.
Place each one on the cooling rack and let the glaze set for 15 minutes.
