INGREDIENTS
- oil or butter - chicken - salt and pepper - cajun seasoning - rice - onion
STEP 1
Add the oil to the stockpot and heat on medium heat. Season the chopped chicken with salt and pepper and 1/2 the Cajun seasoning.
STEP 2
Add to the oil and cook until browned. The chicken should have an internal temperature of 165 degrees
STEP 3
Rinse the rice and cook it in 1 1/3 cups water until it is fluffy and tender. Follow the package directions to cook the rice.
STEP 4
Add the prepared vegetables to the Dutch oven with the chicken. Add more oil if needed.
STEP 5
Cook until the onions are translucent and the veggies are soft. This will take about 6 minutes.
