Tasty and Simple Blueberry Muffin Fudge Recipe

Combing the fresh blueberries with the milk white chocolate is not only a super tasty combination but it also greats a really pretty look as well. That blue color of this fudge recipe is certain to attract the eyes!

Ingredients – Butter - softened – Sugar – Flour – Salt – Blueberries - rinsed and dried (Extra for topping) – Eagle-brand milk (sweetened condensed milk)

Instructions Start by lining the bottom of a 9 X 9-inch square pan with parchment paper, and then set aside.

Once done, take and place the flour in a microwave-safe bowl, and put it into the microwave for 1 minute. Remove from microwave and stir but be careful as the flour will be hot.

Once stirred, take and place flour back into the microwave for another 15 seconds, and then remove and stir again.

Take and add the flour to your mixing bowl, and blend until well combined.

Grab a microwave-safe bowl and add in the Eagle-brand milk, and White Chocolate. Place in the microwave and melt in 15-second intervals, until it is smooth and creamy. Make certain to stir well to blend.

Take and pour the melted milk/white chocolate into the mixing bowl and blend. Make certain that you scrape down the side of mixing bowl, and blend again.

Once it is all scraped down, take and add the blueberries, and blend it on low just a couple of turns. Next, add in the blue food coloring gel, and turn the mixer on low to swirl it so it's swirled for just one turn around the bowl.

Once that is done, take and add in the purple food coloring gel, and mix again, but just like the first time, do one turn around the bowl. Remove the bowl from the mixer, and pour the fudge into the dish.

While you have your fudge getting hard in the fridge, it's time to make the topping. Grab a cookie sheet and line with parchment paper. In a bowl mix together the brown sugar, oatmeal, vanilla, and honey and stir together until blended.

Once done, spread the mixture out on the parchment paper and put it into the oven for 10 minutes at 400 degrees.

Make certain to keep an eye on it in the oven or it will burn. Stir it a couple of times while it's in the oven and remove once it starts to turn golden brown. Let it cool.

Notes When you add the food coloring, make sure to only turn the mixer about one turn around the bowl, otherwise, you won't end up with the swirl color effect, and it will turn out all one color.
