To make the mini cakes, combine the cake mix, eggs, oil, water and extract.
Whisk together well until the cake mix is thoroughly incorporated.
Lightly coat each mini bundt pan with baking spray.
Fill each of the mini bundt pans 2/3 full of the cake mix.
Bake for 28 minutes or until a toothpick inserted into the innermost portion of the innermost bundt comes out clean.
While that is baking, wash and completely dry each of the strawberries very well.
Melt the chocolate in the microwave in 30 second increments, stirring well between each increment, until the chocolate is completely melted and smooth.
Dip the bottom 3/4 of each strawberry into the melted chocolate, then place the strawberry onto a piece of parchment paper to cool and the chocolate to harden.
Remove the cakes from the oven and allow them to cool completely.
Once cooled, drizzle the chocolate over the top of each cake, then top with sprinkles.
Add a strawberry to the center top of each cake then enjoy!
