Ingredients
Bass fillets also known as Green Trout or Largemouth Bass in some areas
Olive Oil I like Cucina Extra Virgin Olive Oilbut any good quality olive oil will do
Zatarain’s Blackened Seasoning or your favorite blackened seasoning brand
Instructions
Moisten both sides of each fillet (either with water, prepared mustard, or cooking spray), and coat with blackening powder. (I used olive oil spray and about 1 Tbsp. powder per Heat 1 Tbsp. of oil per fillet in a skillet over medium-high heat. Once the oil is almost smoking, add the fillets and cook for about 2 minutes per side, or until the fish is opaque and can be flaked with a fork. Remove from the pan and serve immediately. You might wish to add your favorite sauce over the fish, but we are watching our weight and loved it just the way it came out of the pan.
