Combine the cream cheese, marshmallow fluff, powdered sugar, vanilla, salt, and cocoa powder in a large mixing bowl. Mix with a hand mixer until well combined. It will be tacky in texture.
Fold in 1/2 cup of the mini chocolate chips and 1/4 cup of the mini marshmallows. Combine until the mixture forms a ball.
Place the cheeseball onto a strip of plastic wrap. Be sure to place it in the middle, bring up the sides, and tie it at the top. Place it in the fridge for at least 60 minutes.
Crush 6 sheets of the graham crackers. You can put them in a sealable bag and use a rolling pin to crush them. Measure out 1/4 cup of the graham crackers.
On a plate, mix the graham crackers, 1/2 cup of the chocolate chips, and 1/4 cup of the marshmallows.
Take the cheeseball out of the fridge and unwrap it. Put it in the middle of the plate and roll it into the mixture. Cover the entire cheese ball.
Serve with cookies, fruit, graham crackers, etc.
Notes
Store the leftovers in an airtight container for up to 4 days. The outer coating will soften as the days pass.
